The first thing to do is remove the small scales from the asparagus stalks on the sides with a small paring knife. Sometimes thick asparagus can have a tough outer skin. Although it is not a necessary step, but if you find it too difficult, you can remove the hard skin with the vegetable peeler.

While washing them under running water, hold the lower end of the stem with one hand and gently bend it with the other hand. The stem will snap at the tender spot and the broken ends can be used for soups. Once you have finished breaking off the stem, rub the asparagus gently. Turn them over to clean the tips of the stems.

After the washing process you will need to dry the asparagus. The easiest drying method is to roll them between two clean kitchen towels. You can cook them whole or cut them into smaller pieces for frying or other means of cooking.
