Garlic is easy to grow and can be grown year round in temperate climates. In cold climates, cloves can be planted in the ground about six weeks before the ground freezes and can be harvested in late spring. Garlic plants are not attacked by pests. Instead, they suffer from pink root, a disease that stunts the roots and turns them pink or red. Garlic plants can be grown together, leaving enough room for the bulbs to mature, and are easily grown in containers of sufficient depth.

A large number of sulfur compounds contribute to the smell and taste of garlic. Diallyl disulfide is believed to be an important olfactory component. Allicin has been found to be the compound most responsible for the “hot” sensation of raw garlic. This chemical opens TRP (transient receptor potential) thermal channels that are responsible for the burning sensation of food.
