Classic Herb Cream Soup

What do you need:

  • 5 cups of chicken broth

  • 1 cup of chopped spinach

  • 1 cup green onions, chopped

  • 1/2 cup of chopped parsley

  • 1/2 cup basil, chopped

  • 1 cup of cream medium and a half

  • 5 tablespoons butter

  • 2 times. all-purpose flour

  • 1 teaspoon white sugar

  • Salt and ground black pepper to taste

In a large saucepan, melt 3 tablespoons. butter over medium heat then add the onions. Sauté the onions until tender before adding the spinach, parsley, and basil. Reduce heat to low and cover for 10 minutes. Add the chicken broth and sugar then slowly add the cream. Cover and simmer for 30 minutes. Melt the remaining butter in a separate saucepan over medium heat. Add the flour and stir constantly for at least 2 minutes. Pour some of the herb soup over the flour and mix until smooth. Remove from heat and pour the flour mixture over the soup. Transfer the soup to serving bowls and garnish with parsley leaves if desired.

Hot Carrot and Cumin Soup

What do you need:

  • 6 cups of chicken broth

  • 1 kilogram. carrots, peeled and cut into chunks

  • 1 potato, peeled and cut into chunks

  • 1 medium onion, sliced

  • 2 times. olive oil

  • 1 tablespoon. ground cumin

  • Salt and ground black pepper to taste

Heat the olive oil in a large pot over medium heat. Add the carrot, potato and onion slices and sauté for about 5 minutes. Add the chicken broth and cook until the vegetables are tender. Remove from heat and pour into a blender. Process until the soup is smooth. Transfer to a serving bowl and season with cumin, salt, and pepper. Mix soup well before serving.

Zucchini soup with herbs and spices

What do you need:

  • 5 cups of vegetable broth

  • 2 pumpkins, peeled and diced

  • 2 celery sticks, chopped

  • 2 garlic cloves, minced

  • 1 chopped onion

  • 1 sprig of fresh rosemary

  • 1 tablespoon. olive oil

  • 1/2 teaspoon dried chili flakes

  • 1 pinch of ground cumin

  • 1 pinch of smoked paprika

Heat the olive oil in a large skillet. Add the garlic, onion, rosemary, chili flakes, cumin, and paprika and sauté until the garlic and onion are tender. Add the squash and celery and cook for 5 minutes, making sure they are coated with the herbs and spices. Add the vegetable broth and bring to a boil. Cover and simmer for 40-50 minutes. When ready, puree the soup in batches with a blender. Transfer to a serving bowl and garnish with a sprig of rosemary.
